The easiest, most fun, oyster appetizer recipe EVER may this potato chip oyster developed at Sunset magazine. They may look ridiculously easy, but taste great. If feeling fancy, present them to friends as chips with “deconstructed oyster dip.”
Smoked Oysters on the Half “Shell”
Ingredients
- Potato chips (I prefer ruffled, dip-style chips)
- 2 3 ounce cans smoked oysters
- 8 ounces creme fraiche
- Small bunch of chives, chopped
Directions
- Lay about 25 large salted potato chips on a serving plate.
- Top each chip with a smoked oyster, cut in half if large. Add about 1/4 teaspoon creme fraiche to each, and finish with a sprinkle of chopped chives.
Note: The original recipe calls for sour cream, but I love the richness of the creme fraiche with the smoky oysters. You may prefer the tang of sour cream. Give both a try.
